This morning I woke up at 8:30. The early-morning café schedule has officially seeped into my regular life. For years I was a night owl — all throughout high school and for most of college I stayed up all night, frequently napping after class or work just to rejuvenate for more work later on in the day. Now that I have to be up at 6:45 for work during the week, waking up early — and its counterpart, going to bed early — has become a way of life. This morning, I trotted over to the grocery store to pick up some syrup and soymilk — operation blueberry pancakes had begun.

I’m going to continue on this cooking urge and whip up some food that we can eat throughout the week, when we get home from work or class all tired and cranky. On the menu: burritos, potato-leek soup, penette with sautéed spinach and mushrooms, rainbow chard with ginger coconut rice and black-eyed peas, banana-walnut bread…and anything else I can come up with.
Maybe a recipes section for gritmedia next?
